Seitoku is known for the quality of its tsukemen (dipping ramen), but those who are chasing a late-night snack will be disappointed – this is strictly a lunchtime spot. Showing an impressive dedication to duty, the owner makes up a fresh batch of medium-thick, super-chewy noodles every day, and serves all the meals himself. The rich, flavourful soup is a mix of fish stock – made from dried sardines and bonito flakes – and meat-based broth, with a hint of savoury shrimp oil. Seitoku’s housemade noodles are best when paired with its unique tsukemen dipping soup (¥800), but the basic ramen (¥750) is also well worth a try. The restaurant can be found near Tokyo University of Agriculture, 15 minutes' walk from Chitose-Funabashi station.
