I had never heard of the famous tonkatsu chain Katsukura, but luckily came across the branch closest to Nishiki Market. Even at lunchtime, we only had to wait a short while before we were seated.
I had the 70g Yonesawa Sangen pork fillet cutlet and the husband ordered yuba and vegetable croquettes. It was fun to make our own sauce by grinding toasted sesame seeds in a pestle and mortar, then adding condiments, including yuzu in a thinner sauce, the standard one and a rich, thick one. Highly recommended.
