Not actually sure of the name of this place, but it's in Rio Verde, which is a small village halfway between Baños and Puyo (see 'Ruta de las Cascadas') and the lovely woman who owns it makes the best empanadas you'll ever taste. With lovely ingredients, and chocolate that actually tastes good (hard to come by in Ecuador, despite all the cocoa plants). She not only does a variety of great empanadas, there's also corn, plantains, juices and smoothies. All local stuff, and deliciously made. And there's an amusing little 'free parking for bikes' area. Not hard to find; just cycle through Rio Verde (there's one main road) until you're nearly approaching the main road again, and look out for the green painted café and the bike parking!
